{"id":2050,"date":"2010-04-13T21:34:14","date_gmt":"2010-04-14T03:34:14","guid":{"rendered":"http:\/\/sholeh.calmstorm.net\/blog\/?p=2050"},"modified":"2010-04-13T21:40:35","modified_gmt":"2010-04-14T03:40:35","slug":"stuffed-grape-leaves-dolmeh","status":"publish","type":"post","link":"https:\/\/sholeh.calmstorm.net\/blog\/archives\/2050","title":{"rendered":"Stuffed grape leaves (dolmeh)"},"content":{"rendered":"<p>For the Chicago Naw-Ruz celebration I made Persian dolmeh.\u00c2\u00a0 I had lent my favorite cookbook to a coworker, and realized that I needed to take another look at the recipe.\u00c2\u00a0 A quick Google search confirmed my fear: there were no recipes that matched what I remembered, and certainly no tutorials.\u00c2\u00a0 My mother&#8217;s mother taught me at a young age how to make dolmeh, and it is one of my favorite foods.\u00c2\u00a0 It can be an appetizer or a main dish, and is remarkably easy to make.\u00c2\u00a0 I took photos as I went!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span><\/p>\n<p>1 can grape leaves<br \/>\n2\/3 cup rice<br \/>\n1\/2 cup yellow split peas<br \/>\n1 tsp salt<br \/>\n1 onion, diced<br \/>\n2 cloves garlic, diced<br \/>\n1\/2 lb ground beef or lamb<br \/>\n1 cup chopped scallions<br \/>\n1\/2 cup chopped fresh dill or 2 Tbs dried<br \/>\n1\/4 cup chopped fresh mint or 1 Tbs dried<br \/>\n3 1\/2 cups chopped fresh parsley or 1 cup dried<br \/>\n1\/4 tsp black pepper<br \/>\n1 tsp cinnamon<br \/>\n2 tsp lemon juice<\/p>\n<p>1. Wash and boil yellow split peas until soft, about 1 hour.\u00c2\u00a0 Stir occasionally.<\/p>\n<p>2. Make 2 cups of white rice, either in a pot or rice cooker.<\/p>\n<p>3. (for meat eaters) Fry ground meat on the stove with onions, salt, and pepper. Drain.<\/p>\n<p>4. Wash all of the greens thoroughly:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1242.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>5. Then put them all in a food processor and grind until very small.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1243.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>6. In a large mixing bowl, mix rice, split peas, greens, lemon juice, and meat.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1232.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>6. Open jar of grape leaves, carefully rinse and untangle them.\u00c2\u00a0 I like to drape them around a mixing bowl or colander.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1235.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>7. Place leaf on a plate, with the veins of the leaf face-up.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1236.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>8. Put a spoonful of the mixture on the leaf.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1237.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>9. Fold one side over.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1238.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>And another side.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1239.jpg\" alt=\"\" width=\"400\" height=\"266\" \/><\/p>\n<p>Until it is all wrapped and secure, and none of the mix will spill out.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1240.jpg\" alt=\"\" width=\"400\" height=\"257\" \/><\/p>\n<p>10. Place in a pot on the stove.\u00c2\u00a0 I like to put 1 leaf on the bottom of the pot to make sure that none of the dolmeh sticks to the pot, with a little water.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/img.photobucket.com\/albums\/v92\/fireflyinthecity\/Blog\/IMG_1241.jpg\" alt=\"\" width=\"400\" height=\"267\" \/><\/p>\n<p>11.
