{"id":895,"date":"2006-06-22T14:58:49","date_gmt":"2006-06-22T12:58:49","guid":{"rendered":"http:\/\/sholeh.calmstorm.net\/word\/archives\/895"},"modified":"2006-06-22T14:58:49","modified_gmt":"2006-06-22T12:58:49","slug":"amaranth-quinoa","status":"publish","type":"post","link":"http:\/\/sholeh.calmstorm.net\/blog\/archives\/895","title":{"rendered":"Amaranth &#038; Quinoa"},"content":{"rendered":"<p>I found <a href=\"http:\/\/www.cnn.com\/2006\/HEALTH\/06\/21\/alternative.grains.ap\/index.html\">this article<\/a> on CNN about the growing demand for amaranth and quinoa, as well as other alternatives to wheat.<\/p>\n<p><i>&#8220;One reason for the fledgling demand is a growing awareness of <a href=\"http:\/\/www.celiac.org\">celiac disease<\/a>, which is triggered by gluten, the protein found in wheat.&#8221;<\/i><\/p>\n<p>My frustration with trying to find alternatives to bread substances is that it can get very expensive.  The American market is not yet at the point where obtaining gluten-free meals is inexpensive.  If I want to eat a quick meal, I am often reduced to salad (and I&#8217;m am completely sick of salad).<\/p>\n<p>I don&#8217;t mind when people forget I can&#8217;t eat bread\/pasta\/pizza\/etc, but it is frustrating when I try to take responsibility for my food and it STILL has allergens in it.  Although the <a href=\"http:\/\/www.mayoclinic.com\/health\/food-allergies\/AA00057\">recent requirements to list common allergens<\/a> helps, I am still very limited in my food options at times.<\/p>\n<p>Sometimes I slip up and eat a cookie, or a piece of cake.
